Summer Salad
Ingredients
12oz cooked rotini
3 cups fresh arugula
1 1⁄2 cups cherry tomatoes
1 cup fresh chopped basil
1 cup crumbled feta
12 cooked shrimp (seasoned with salt, pepper and garlic powder and saute in olive oil)
1/3 cup olive oil
3 tbsp balsamic vinegar
Juice of 1 lemon
Salt, pepper, oregano, pepper flakes to taste
Directions
Combine all ingredients in a big bowl and serve chilled
