Summer Salad

Ingredients

  • 12oz cooked rotini 

  • 3 cups fresh arugula 

  • 1 1⁄2 cups cherry tomatoes 

  • 1 cup fresh chopped basil 

  • 1 cup crumbled feta 

  • 12 cooked shrimp (seasoned with salt, pepper and garlic powder and saute in olive oil) 

  • 1/3 cup olive oil 

  • 3 tbsp balsamic vinegar 

  • Juice of 1 lemon 

  • Salt, pepper, oregano, pepper flakes to taste

Directions

Combine all ingredients in a big bowl and serve chilled
